5 large potatoes; 1/2 cup crackling; 1 onion; 60-70cm chitterlings; 2 tbsp pork fat; a pinch of marjoram; salt

Baked potato sausage (Kishka bulbyanaya, Vėdarai, Kiszka ziemniaczana)

Wash, dry, peel and grate the potato finely. Stir in the juice from a grated onion. Soften the finely chopped onion in the fat. Add the onion, crackling, marjoram, and salt to the potato and mix well. Stuff the chitterlings with the potato filling using a sausage filler and tying it at both ends. Place the sausage in an oiled pan, prick it with a pin and bake it in the oven at 200ºC (390°F) for 1 hour basting it a couple of times with pig fat. Serve with sour cream or milk.
